Recipe – Cucumber, Onion Creamy Salad

IMG_1502This is one of our favorites, especially about now when you’ve got a lot of cucumbers from the garden and are looking for tasty ways to eat them. Sorry the picture is so dark, I used a glass bowl and the background was darker than I thought it was, making everything shadowed.  I’m a cook, not a photographer.

The mix that you toss the cucumbers and onion into also makes for an awesome chip dip.  In fact, that’s where the original for this recipe started was as a potato chip dip.  Since we don’t make chips often (and only rarely buy them), it morphed into this.  Many other veggies toss well into this salad as well, so don’t limit yourself to just cukes and onions.

IMG_1498Here’s what you’ll need:

  • 2 medium-sized cucumbers
  • 1 small onion (red preferred, white shown here)
  • 1/2 cup of sour cream (whole, low fat, or whatever)
  • 1 tablespoon of apple cider vinegar OR lemon juice
  • 1/4 tablespoon of dried dillweed
  • 1 tablespoon of sea salt (sub. with regular salt if you have to)
  • 1 tablespoon of sumeric, brown sugar, or regular sugar
  • dash of black pepper

First, clean, skin, and slice the cucumbers into rounds (about 1/4″ thick), then cut the larger rounds in half to make half-moons.  Clean, skin, and slice the onion into half moons as well.  Set aside in a large mixing bowl.

In another bowl, mix the other ingredients, stirring well.  This will make a great dip-cream that smells delicious.  Now lightly toss the mix into the cucumbers and onions in portions.  I usually break it into thirds (roughly), putting in 1/3 at a time, tossing well with a wooden salad fork, then ad more until it’s all in there.

Once all of the cukes and onions are well-covered with the cream, cover the bowl and refrigerate for two or three hours (up to 24), toss lightly and serve.  I usually cover with just a large dinner plate, it doesn’t have to be “sealed.”

This feeds about four to six people as a side dish.  Enjoy!
