Veggie Detox Day 3: The Starvation Ends

I’ll admit that for the past two days, yesterday in particular, I’ve been really hungry (hence the Ode to Cheese).  Today, though, I found out how vegetarians live without perpetually starving.

Kathy made a soup today that marked the end of my 3 days of just juice and raw veggies (I technically started Saturday night with a large dinner salad).  I didn’t help make it, but here’s what I know was in it:

  • carrots
  • lentils
  • onion
  • garlic
  • vegetable stock
  • cumin, bay leaf, and other spices
  • pinto beans (added because we had no black beans)
  • celery

The lentils were not reconstituted in the usual manner, but merely left to cook with the rest for about an hour.  So they’re still crunchy, which is awesome.  The pintos were already re-hydrated since I’d gotten them out last week to use in a chili and then left in the refrigerator, forgotten.  :)  Otherwise, you can cook them in a pressure cooker and have them back up to snuff in just a few minutes.

I asked Kathy for the recipe, but she didn’t have one.  She made it up as she went, based on a black bean and lentil soup she’s made in the past (which usually has sausage and leaks in it).  She says she just “dumps stuff in until it tastes right.”

Works for me.  Holy crap this is awesome.

For the rest of the week, the vegetarian diet will continue, but will be less stringent.  I’ll still be juicing in the mornings, but otherwise will be eating whole grains and such.

For the curious, I fully expected to get diarrhea or something when I started this detox thing.  Didn’t happen.  In fact, gastro-wise, little has seemed to change.  I would say that’s mainly because my diet was pretty OK before this, so maybe not much had to happen.

For the rest of the week here on AaronsEnvironMental, I’ll keep you updated on the diet.  I don’t think it’ll be as exciting, though.  :)
